This is a quick and easy meal that everyone is sure to love. This is one of my favorite go-to meals when I need to make a quick meal prep. The beauty of this meal is that it can be enjoyed over rice, pasta, or you can make it into a sandwich. The possibilities are endless!
Ingredients
3 Bell peppers
1 Onion
1 Pack of sausage 12oz (I used chicken sausage)
1 Can of diced tomatoes 28oz
1 Tablespoon of garlic
Salt to taste
Directions
Slice peppers and onion and sausages.
Heat 1 tablespoon of oil in a pan and cook peppers and garlic on medium heat for about 5 minutes.
Add sausages and cook for 5 to 8 minutes.
Next, add tomato sauce and cook for about 5 to 10 minutes.
Meal Prep Containers
Add 1/2 cup of brown rice to containers.
Evenly distribute sausage and peppers mixture to each container. Be mindful of how many sausage slices are in each container. You may have to move them from one container to the next to get an even distribution.
